Apple & Cranberry Muffins

1-1/2 cups self-rising flour
1 teaspoon ground cinnamon
1 egg, lightly beaten
3/4 cup firmly packed brown sugar
1/4 cup applesauce
1 teaspoon vanilla extract
3/4 cup finely chopped apples
3/4 cup chopped cranberries
Recipe
Preheat oven to 350°F. Spray 12 muffin cups with non-stick vegetable spray.
In a large mixing bowl, combine flour and cinnamon.
In a medium bowl, combine egg, brown sugar, applesauce, vanilla, apples, and cranberries; mix until well combined. Add to flour mixture, stirring until just moistened. Fill muffin cups two-thirds full.
Bake 20 to 30 minutes or until golden brown. Serve hot.
