Pineapple Carrot Raisin Muffins

List of Ingredients
2 cup unbleached flour
½ cup raisins
1 cup granulated sugar
½ cup walnuts, chopped
2 teaspoons baking powder
10 oz crushed pineapple, undrained
1 teaspoon cinnamon
2 whole eggs
½ teaspoon ginger
¼ cup light margarine, melted
½ cup carrots, shredded
1 teaspoon pure vanilla extract
Recipe
Preheat oven to 375. Prepare 12-2 1/2" muffin cups with cooking spray and flour; set aside. In a mixing bowl, combine flour, sugar, baking powder, cinnamon, ginger, carrots, raisins, walnuts, pineapple, eggs, margarine, and vanilla extract. Mix until blended. Spoon into prepared cups. Bake for 20 minutes.
