    Pumpkin Maple Cream Cheese Muffins

    CREAM CHEESE FILLING
    4-ounces cream cheese, softened
    2 tablespoons brown sugar
    1-1/2 teaspoons maple flavoring
    In a small bowl, combine all ingredients; mix until well blended. Set aside.
    NUT TOPPING
    2 tablespoons brown sugar
    1/4 cup chopped walnuts
    In a small bowl, combine brown sugar and walnuts; mix well. Set aside.
    MUFFINS
    2 cups self-rising flour
    3/4 cup firmly packed brown sugar
    1/2 cup chopped walnuts
    1 teaspoon ground cinnamon
    2 eggs, lightly beaten
    1 cup canned pumpkin
    3/4 cup evaporated milk
    1/4 cup vegetable oil
    2 teaspoon maple flavoring

    Recipe



    Preheat oven to 400°F. Spray 12 muffin cups with non-stick vegetable spray.
    In a large mixing bowl, combine flour, brown sugar, walnuts, and cinnamon.
    In a medium bowl, combine eggs, pumpkin, evaporated milk, oil, and maple flavoring; mix well. Add to flour mixture, mixing until just blended. Spoon into prepared muffin cups. Dollop 1 teaspoon Cream Cheese Filling in center of each muffin, pressing lightly into batter. Sprinkle Nut Topping over each muffin.
    Bake 20 to 25 minutes or until tester inserted in center comes out clean. Cool in pan for 5 minutes; serve warm.
