Buttermilk Apple Pie

1 pie crust from your favorite recipe
Apple filling:
1/4 cup butter
2 apple that are tart (I just use granny smiths), peeled, cut and core removed
1/2 cup granulated sugar
1/2 teaspoon ground cinnamon
Buttermilk custard:
1/4 cup butter, softened
1 1/3 cup granulated sugar
4 eggs
1 teaspoon vanilla extract
2 tablespoon all-purpose flour
3/4 cup buttermilk
Topping:
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/2 cup flour
1/4 teaspoon ground cinnamon
3 tablespoon butter

Preheat oven to 300F
For the filling, melt 1/4 c. butter in skillet over medium heat. Add the apples, 1/2 c. granulated sugar and 1/2 tsp cinnamon. Cook about 5 min., until tender. Set aside.
For the buttermilk custard, in a large mixing bowl combine 1/4 c. butter and 1 1/3 c. granulated sugar. Beat until creamy. Add eggs one at a time, beating until yellow disappears. Mix in vanilla, and 2 Tbsp flour. Mix until completely blended and pour in buttermilk; beat until smooth. Prick your piecrust with a fork. Ladle in the apple mixture, then pour buttermilk custard over it. Bake for 30 min. For the topping, do this while pie is in the oven, combine 1 1/4 c. granulated sugar, 1/4 c. brown sugar, 1/2 c. flour, and 1/4 tsp. cinnamon in a small bowl. Cut in 3-tablespoon butter until mixture is crumbly. After pie has cooked 30 min. take out of oven and sprinkle the topping evenly over the pie. Place back in oven and bake for another 50 min., or knife inserted comes out clean. Pie should rest for 1 hr. before you serve it.
