    Genia's Ginger Snap Lemon Pie

    Recipe Introduction

    This is a quick and easy pie. Ginger and lemon are perfect as a sumer treat.

    List of Ingredients

    Crust:
    1¼ cups ginger snaps (about 25 cookies)
    ¼ cup sugar
    1/3 cup melted butter

    Filling:
    3 egg yolks
    14oz sweetened condensed milk
    ½ cup lemon juice
    OR
    2 cans lemon pie filling

    Whipped topping

    Recipe

    Break 4 cookies into pieces and place into electric blender. Blend to crumbs. Empty crumbs into a bowl, and continue until all cookies are crumbled. Add melted butter and sugar. Mix until crumbs are moistened. Press into bottom of a 9” pie plate. Bake at 350 degrees for 8 minutes. Cool. In bowl, beat egg yolks. Stir in milk and juice. Whisk ingredients well. Pour into piecrust and bake for 30 minutes at 325-350 degrees. Cool. Spread with whipped topping. Keep refrigerated. OR: Empty 2 cans lemon pie filling into crust. Refrigerate until set. Spread with whipped topping. Keep refrigerated.
