    OH MY GOSH! We thought we'd died and gone to heaven when my mom made these! I don't think I've ever eaten one that had cooled to room temperature.

    List of Ingredients





    Pastry for 2 crust pie
    8 oz package dried apricots
    1 1/2 C water
    1/8 tsp salt
    3/4 C sugar
    1/4 tsp ginger
    cinnamon sugar

    Recipe




    Bring water, apricots and salt to a boil for 5 minutes; cover and simmer 10 minutes more. Drain water; stir in sugar and ginger. Mash well with a fork or put in food processor. Roll dough out 1/8 inch thick and cut into 2 1/2 inch circles. Place filling in center of dough and fold over to form a half circle. Seal edges well. Fry until golden brown and dust with cinnamon sugar.
