1 - 9 inch unbaked pie crust
2 cups cooked pumpkin
2 eggs
1/3 cup maple syrup, honey, or rice syrup
pinch of salt
1½ tsp pumpkin pie spice
1 package silken tofu

Preheat oven to 425°F. Blend all filling ingredients in a blender. Pour into unbaked pie shell and bake for 15 minutes. Reduce temperature to 350 degrees and bake an additional 45 minutes or until set.
