Watermelon Cool Pie

8oz cool whip, extra creamy, thawed
Few drops of green food coloring
2/3 cup boiling water
1 4-serving package watermelon Jell-O
½ cup cold water
Ice cubes
Graham cracker crumb piecrust
Chocolate chips
Recipe
Mix 1 cup cool whip with food coloring. Refrigerate. Stir boiling water into Jell-O and mix 2 minutes. Mix ½ cup water and ice cubes to make 1¼ cup. Add to Jell-O until slightly thickened. Remove excess ice cubes. Add remaining cool whip, not the green. Chill 10-15 minutes. Spoon into crust. Chill 4 hours. Garnish rim of pie with green cool whip to make “rind”. Decorate with chips to resemble “seeds”.
