    Arcobasso's Restaurant St.Charles, MO Thomas Arcobasso was a truck driver, waiting out a strike when he made the decision to open a restaurant in Dellwood , a suburb of North St. Louis County... "This was something that had always intrigued me", he said, even though he had no business experience...the year was 1972 , on the first floor of a 2 story office building. Almost immediately his creamy Italian salad dressing was garnering raves and requests for the recipe.. the recipe is still a secret but the salad dressing has been available for years in home sizes at local supermarkets and specialty stores.. he shares this recipe, a popular entree served with pasta, vegetable, house salad.. of course we are spoiled in St. Louis by the abundance of Italian restaurants throughout the area and the stores "on the Hill". 2 boneless, skinless chicken breast halves,
    [4 oz each]
    salt and pepper, charbroil until golden, about 5 minutes per side..

    meanwhile combine in a skillet,
    6 Tab. butter
    3/4 cup sliced fresh mushrooms
    1/4 tsp minced garlic
    1 Tab fresh lemon juice...
    cook on medium heat, stirring frequently until mushrooms soften..

    plate up chicken..
    top each cooked chicken breast with 1 slice of provel cheese, then lemon-butter sauce and mushrooms..
    garnish with a sprig of parsley or rosemary and a thin slice of lemon....serves 1

    Provel cheese seems to be available on a regional basis and is widely used in the midwest..
    you could substitute mozzarella or look for it at an Italian specialty store..
