Summer Fruit & Rice Salad

2 cups cooked rice, cooled to room temperature
½ cup strawberries, quartered
½ cup grapes, halved
2 kiwi fruit, sliced into quarters
½ cup pineapple tidbits
½ cup banana, sliced
¼ cup pineapple juice
2 tablespoons plain yogurt
1 tablespoon honey
Lettuce leaves
Recipe
Combine rice and fruit in a large bowl. In a smaller bowl, blend juice, yogurt and honey. Pour over rice mixture. Toss lightly. Serve on lettuce leaves.
