    Grinders From the Broadway Oyster Bar

    Recipe Introduction

    A Grinder is a stuffed sandwich -- sometimes stuffed with oysters. The Broadway Oyster Bar in the Laclede's Landing area of downtown St. Louis offers grinders with oysters, shrimp or chicken. Sauce:
    3 Tbl. plus 1/2 C. (1 stick) butter -- divided
    3 Tbl. all purpose flour
    1 C. water
    1/4 C. hot pepper sauce
    1-1/2 tsp. chicken base (found in bouillon section of grocery stores)
    1/2 tsp. Cajun season

    Sandwiches:
    4 (8 inch) pieces French bread
    2 lbs. raw oysters
    OR 24 oz. small cooked shrimp OR 24 oz. diced cooked chicken

    To Prepare Sauce: Make a roux with 3 Tbl. butter. Stir in flour and mix. Set aside. In medium sauce pan, mix water, pepper sauce, chicken base and Cajun seasoning; bring to boil. Whisk in roux and cook till thickened. (Mixture will be thick). Remove from heat; stir in remaining 1/2 C. butter.

    To prepare sandwiches: Using serrated knife, slice bread in half lengthwise. Hollow out bread, leaving a 1-inch border. In skillet, combine 1/3 C. sauce and oysters; cook over medium heat until plumped (2 to 3 minutes depending on size). (If using shrimp or chicken, stir into sauce and cook just until heated through). Spoon filling and remaining sauce into hollowed-out bread; serve immediately
