Recipe Introduction
my family has always enjoyed the addition of cubed, left-over ham to our favorite macaroni and cheese. Adding chopped ham and onion to green beans is quite tasty too.
Mentioning the green beans made me think of the following recipe I haven't made since the 1960's/1970's. I don't know your children's likes and dislikes but my children liked these Ham Pinwheels.
List of Ingredients
2 C. sifted flour
1 T. baking powder
1/2 tsp. salt
4 T. vegetable shortening
2/3 to 3/4 C. milk
1 lb. ground cooked ham
2 T. prepared mustard
1 C. diced cooked green beans
1 C. cooked whole kernel corn
2 C. medium white sauce
WHITE SAUCE:
4 T. margarine
4 T. flour
1 tsp. salt
2 C milk
Recipe
Preheat oven to 425 degrees F.
Mix and sift dry ingredients. Cut in shortening and add enough milk to make a soft dough. Roll out into an oblong 1/4" thick on a lightly floured board.
(NOTE: To save time you can use a biscuit mix recipe such as Bisquik following the directions for biscuits.)
Combine ham and mustard and spread on dough.
Roll up jelly roll fashion. Cut in slices 1" wide, place on greased baking sheet cut side down and bake at 425 degrees about 20 minutes.
Combine white sauce, cooked beans and corn. Heat and serve on pinwheels. Sprinkle with paprika.
WHITE SAUCE:
Melt margarine, then mix in flour and salt. Add milk gradually. Heat and stir constantly until thickened
