    List of Ingredients




    ½ lb. hamburger
    ½ cup beef stock
    ½ cup chopped onions ¼ t. salt
    1 ½ T minced garlic freshly ground pepper
    1 T chili powder
    ½ cup cooked small red beans
    ¼ t oregano 2 Russet potatoes
    ¼ t. cumin 1/4 cup skimmed milk
    ¼ large can chop tomatoes
    ½ cup cream cheese
    2 chiptoles in adobo sauce, seeded and finely chopped
    1 cup shredded smoked Gouda
    parsley

    Recipe



    1. Sauté crumbled hamburger in skillet until pink removed.
    2. Add onions and garlic and cook until soft; place in colander and drain fat.
    3. In large pot, place drained meat/onions, spices, 1 chipotle and tomatoes & simmer on low for 1 hour; add beans and simmer on low for 1/2 hour.
    4. . Bake 2 large Russet potatoes until done – 400 degrees for 1 hr or until soft.
    5. . Cool potatoes; slice in half horizontally. Remove inside of potato being careful not to pierce skin. Set aside
    6. Heat oil in deep pan – deep fry the 4 skins till crisp and brown. Drain on paper toweling and put in baking dish.
    7. Heat up milk, cream cheese, ¼ cup shredded Gouda cheese and one chiptole with extra adobo sauce in microwave.
    8. Warm up potatoes, add milk, cheeses and chiptole and mash until smooth.
    9. Fill base of potato skins with some chili.; sprinkle ¾ of remaining shredded smoked Gouda over each.
    10. Top each potato with ¼ mashed potatoes & bake in 350 oven for 45 until tops are browned.
    11. Decorate with parsley and serve.
