Genia's Mashed Potatoes with Caramelized Onions

2½lb baking potatoes, peeled and chunked
Salt, pepper and garlic (1-2 teaspoons each)
¼ cup milk, (+/-)
1-2 tablespoon oil
1 large onion, peeled and ¼” slivered
2 teaspoon sugar
½ teaspoon vinegar
Salt and pepper
Recipe
In a saucepan, boil potatoes in lightly seasoned water (using salt, pepper and garlic); boil tender. While cooking; saute onion in oil; add sugar and vinegar; cook 10-15 minutes or until clear. Season with salt and pepper. Drain potatoes, reserving ½-1 cup of juice. Pour juice into potatoes and beat on high with electric mixer until fluffy. Add sour cream and milk (milk necessary). Beat until fluffy. Season with chives, salt, pepper and garlic.
Place each serving on oven-proof plate or dish and bake at 300 degrees. Top with a pat of butter and caramelized onions. Heat until butter melts and/or outer layer kinda’ dries out.
