Recipe Introduction

Growing up in a predominately German family meant sweet sour bacon onion German potato salad...at the ripe old age of 26 ,I tasted this at a BBQ given for a friend's birthday...his mother, a native of Boston, Massachusetts, fixed this version, I still haven't convinced my farming relatives in southern Illinois that this is "real" potato salad, but I always bring home an empty bowl from reunions!!! List of Ingredients

1 qt mashed potatoes [boiled and mashed]
1 tsp. sugar
1 tsp vinegar
1 tsp salad mustard
1/4 cup mayo
1 tsp pickle relish
1 Tab minced onion
salt and pepper to taste




Recipe

mix in bowl and fold in 3 hard boiled chopped eggs... cut up 2 hard boiled eggs in slices for the top and sprinkle with paprika.. can be served warm or chilled...I usually triple this recipe...
