Recipe Introduction

My grandmother's recipe was served lots of farmhands... 6 medium red potatoes, cooked in skins ,peeled and cut in slices , set aside

1/2 lb bacon, diced, fried crisp

Drain off all fat except 6 Tab. set bacon aside. Add

1/2 cup chopped onion to fat in frying pan and cook 1 minute...stir in
1 Tab flour
1 tsp salt
1 1/2 Tab sugar
1/4 tsp pepper

Stir over medium heat, add:
1/2 cup water
1/2 cup cider vinegar
Simmer and stir Add:

1/4 cup fresh, chopped parsley
1 tsp. celery seed

To potatoes and bacon...gently fold in hot dressing...serve warm ...chill any leftovers..
