Sausage & Apple Stuffed Squash

2 Acorn squash; halved
3/4 lb. bulk pork sausage
3/4 cup chopped celery
3 tablespoon chopped onion
1 medium cooking apple; peeled, cored and chopped (1 cup)
1 slightly beaten egg
1/2 cup dairy sour cream
3/4 cup shredded American cheese (3-oz.)
Recipe
Place squash halves cut side down in a baking dish. Bake in a 350º oven about 45 minutes or until tender. Sprinkle cut side with salt. In a skillet cook sausage, celery, and onion until meat is browned. Stir in apple; cook 3 minutes more. Drain off fat. Combine eggs and sour cream; stir into sausage mixture. Bake 20 minutest. Sprinkle cheese atop. Bake 5 minutes more.
