Lowfat Chewy Fruit & Oatmeal Bars

Recipe Introduction
I am a big fan of oatmeal and it's health benefits so the "Low Fat Chewy Fruit and Oatmeal Bars " on the back of the box really called to me. I made them this evening as I wanted something a little healthier to take to work to snack on. These are low fat, not low carb. I did make a thin water/powdered sugar glaze to just crisscross on the top. I will cut these, wrap them, and freeze in a tupper.
List of Ingredients
/4 cup packed brown sugar
1/2 cup granulated sugar
1 cup plain low fat yogurt
2 egg whites, lightly beaten
2 tbsp vegetable oil
2 tbsp fat free milk
2 tsp vanilla
1 and a 1/2 cups all purp flour
1 tsp baking soad
1 tsp cinnamon
1/2 tsp salt, optional
3 cups oatmeal, quick or old fashioned
1 cup diced dried mixed fruit, such as cranberries, raisins, prunes, apricots,etc
Recipe
Preheat the oven to 350 degrees. In a large bowl, combine sugars, yogurt, egg whites, oil, milk, and vanilla. Mix well. In another bowl, combine the flour, baking soda, cinnamon, and salt. Mix well. Add to the yogurt mixture and beat well. Stir in oats and fruit.
Spread dough on the bottom of an ungreased 9x13 pan. Bake 28-32 minutes or until light golden brown. Cool completely on a wire rack. Cut into bars and store tightly covered.
My opinion of the recipe? A tad dry, the usual result of low fat, but very tasty. I used chopped dried apricots, prunes, and cranberries. These had a nice toasty oat flavor.
