    List of Ingredients




    1 gallon & 2 cups chicken stock
    1 lb 4 oz. carrots, 1/4" dice
    1 lb 4 oz. onions, minced or 3/4 c onion flakes
    2 2/3 cup flour
    1 1/2 cup margarine or butter
    1 qt. & 2 cup lowfat milk, hot
    1 teaspoon salt
    1/2 teaspoon white pepper
    1/4 teaspoon hot pepper sauce
    2 lb 6 oz. lowfat cheddar cheese, shredded
    2 lb 14 oz frozen chopped broccoli

    In a pot, bring chicken stock to a boil. Add carrots and onions. Boil until vegetables are tender, approximately 10 minutes. In a heavy pot, melt margarine or butter. Whisk in flour and cook for 2 minutes. Do not brown. Slowly add hot milk to roux. Continue to whisk until smooth. Slowly add stock and vegetables. Add salt, pepper and hot sauce. whisk to blend. Simmer until thickened, about 10 minutes, whisking occasionally. Add cheese, whisking occasionally until cheese is melted. Add broccoli. Stir occasionally until heated to serving temperature.
