    Famous Barr French Onion Soup

    List of Ingredients

    1 3/4 pounds peeled onions
    3 oz butter
    1 1/2 tsp salt
    1 tsp pepper
    1 tablespoon paprika
    1 Bay Leaf
    1/2 c flour
    1 1/2 quarts canned beef broth
    1 c white wine

    Recipe

    Slice onions 1/8" thick. Sauté onions in butter in large stock pot. Add flour, stirring to coat onions. Add remaining ingredients (except beef broth) and simmer for 10 minutes. Add broth and continue to simmer for 2 hours. Adjust color with kitchen bouquet. Ladle soup into crockery bowls, top with toasted slice of French bread and slice of gruyere cheese. Place under broiler until cheese is bubbly.
