Recipe Introduction

Old Town St. Charles.. located right across the river from St. Louis, is Old Town St. Charles -- an area of shops and boutiques housed in original turn of the century old buildings. Among these is Magpie's Restaurant, located at 903 South Main Street. In the summer, there is also patio dining. One of their other signature offerings is Baked Potato Soup, which is to die for 1 large onion , Chopped
4 garlic cloves, mince
1 fresh jalapeno pepper, seeded and chopped
sauté in 1/3 cup olive oil in a dutch oven..
add 1 qt chicken stock
and 1 qt. salsa. Bring to a slow boil

add 1/2 tsp cumin
1 small Zucchini, quartered lengthwise, and sliced into 1/4" wedges
1 cup frozen corn..
boil 5 minutes..
remove from heat and
add 1/2 cup fresh chopped cilantro
and juice of 1 lime..
cover and let sit 5 minutes. Adjust taste of salt..
serve in heated soup bowls...serves 8 to 10

Garnish with sour cream, shredded cheddar cheese, tortilla chips, and chopped green onion.
