List of Ingredients
6 strips of bacon, cut-up
4 large potatoes, cut into cubes
1 qt. of chicken broth
1 bunch of leeks, split lengthwise, medium diced, rinsed
1/4 cup of cornstarch
1 cup of heavy cream
Salt and Pepper to taste
Recipe
Render bacon until lightly browned in large pot.
Add chicken broth and potatoes, allow to come to a boil.
When the potatoes are just tender add the cleaned leeks, then take the cornstarch and mix with a little cold water to make a smooth paste, add this to the soup to thicken, make and add more cornstarch mixture if needed.
Allow soup to simmer one minute.
Add heavy cream, salt and pepper to taste.
