1 lb fresh mushrooms, sliced, sauté in 3 Tab butter in a large skillet for about 5 minutes until tender...reserve 1/4 cup for top of casserole..
add 1 can cream of onion condensed soup
1 cup sour cream
1/8 tsp garlic powder
to mushrooms in skillet ..
add 2 package [10 oz each] frozen spinach, cooked according to package; drain and press out liquid. Mix well and spread over bottom of buttered 1 1/2 qt. baking dish arrange 1/4 cup mushrooms on top..
then 1 cup shredded cheddar cheese and sprinkle with paprika..
bake at 350 degrees for 20 to 25 minutes until edges are bubbly...let stand a few minutes before serving...serves 8 to 10 as a side dish..
