Chariton Tartar Sauce

This south St. Louis restaurant was the Chariton.... for many years, this was a family favorite, my grandmother lived close and this was a special treat to have the Friday night Fish fry...here is the Tartar sauce served along side all seafood dishes...
1 fresh egg [see note]
1/2 tsp sugar
1/2 tsp dry mustard
1/2 tsp. salt
1/2 tsp ground white pepper
Beat all in bowl with a fork or whisk for a few minutes
Add a little at a time:
1 cup vegetable oil, keep whisking to incorporate...then add:
1 Tab. white vinegar
1 Tab fresh lemon juice
1 Tab minced onion
1 rib celery, finely diced
1/2 green bell pepper, finely diced
1/4 dill pickle, finely chopped
makes 4 servings, in small cups...add lemon wedges as a garnish...keep refrigerated...
