Chicken Fried Steak

About 2 pounds of round steak.
Buy already tenderized or pound with a mallet until about 1/8" thick, use wax paper on top of steak. Cut into 6- 8 pieces
Mix:
1/2 cup flour
1/2 tsp salt
1/4 tsp black pepper
Dredge the cut pieces of steak in this mixture. Heat about 1/2 cup of lard [or Crisco] in a large frying pan on medium heat. Fry about 10 minutes per side until browned...remove to plate and keep warm.
For gravy, add:
Some of seasoned flour to pan and scrape up the bits of meat and gradually add 1 cup milk and 1 cup water over medium heat. Keep stirring until smooth .I add a pinch of white sugar at this point. Cook about 2 minutes.
