Chocolate-Pecan Caramel Candy Bars

preheat oven to 350 degrees..
line a 9"x13" baking pan with foil, and grease the foil..
Crust:
in a food processor or bowl, combine
1 1/2 cups flour
1/2 cup light brown sugar..
pulse briefly or stir to mix..
add 1/2 cup cold, unsalted butter , cut into 8 pieces..
process or mix until crumbly..
pat evenly onto the bottom of prepared pan..
bake for 12 minutes. Transfer pan to rack..
leave oven on at 350 degrees
Topping:
in a saucepan heat 6 Tab unsalted butter over low heat until it melts and bubbles. Add
1 cup dark brown sugar
3 Tab honey
3 Tab heavy cream
2 Tab. maple syrup
bring to a boil over medium heat, stirring constantly..
let boil 1 minute without stirring..
pour over hot crust..
sprinkle with 1 1/2 cups chopped pecans or walnuts
return pan to oven. Bake for 12 to 15 minutes,
caramel layer will be bubbly..
remove from oven. Sprinkle with 1/2 cup semi-sweet chocolate chips..
let chips melt a minute or so, then swirl with a spatula..
let cool completely..
invert baking sheet onto a wire rack, lift off pan.., and peel off foil..
invert onto cutting board so that chocolate is facing up..
cut into 2x1 1/2" bars..
store between sheets of waxed paper in an airtight container for up to a week. They do freeze well. Makes 32 bars..
