    as made by the mother of Linda Thompson of Thompson's Farms...this recipe is included in the new cookbook

    Kirkwood, Missouri

    5 lbs potatoes, boil in skins...cool, peel and slice
    fry 12 oz of diced bacon, drain and save 2 Tab. grease
    in the same skillet, mix 2 Tab flour into the grease, stir smooth
    add 1 cup sugar
    1 cup vinegar
    dash of water..
    stir until slightly thickened..

    in a large bowl gently mix sliced potatoes
    1 cup sliced celery
    1 large chopped onion
    Pour dressing on top and stir gently until coated,
    add bacon, salt and pepper to taste...
    top with 2 hard boiled eggs, peeled and sliced..

    serve at room temperature. If not serving immediately.
