John M. Dalton was Governor of Missouri in the early 1960's..taste can be varied by using different flavors of roll cheese...today you could substitute any of the semi-hard flavored cheeses available. Also could add grated onion, minced bell pepper or sundried tomatoes...
2 cups instant grits
Mix and cook according to pkg. directions.
1 stick butter[1/2 cup]
1 roll garlic cheese [about 4 to 6 oz. or more]
Broken into small bits and mixed into cooked grits while hot..
Beat 2 eggs into a measuring cup and add enough milk to make 1 cup...
Stir in:
1 tsp. salt
1/4 tsp fresh ground black pepper
Blend into grits and turn into buttered casserole
Bake at 350 degrees for 45 minutes..
Top with 1/2 cup grated cheddar cheese and bake 15 minutes more...
This could be mixed the night before, covered, chilled and baked in the morning for a brunch buffet... for a southwestern kick ,add some sliced Jalapeno peppers, and use Cojack or hot pepper cheese
