Recipe Introduction
This dressing was developed in the 1930's at Hendrickson's Cafeteria in St. Louis, where it was used as a salad dressing, cole slaw mix, and a seasoning for many other recipes. Although the restaurant closed in 1967, the dressing is still made and sold in local grocery stores (without any change to the formula).
As an aside, about four years ago, we had just moved into a brand new villa (like a condo) that had been a display unit. One day the developer knocked on the door with an older couple who wanted to see our former display unit. We invited them in and it turned out it was THE Mr. and Mrs. Victor Hendrickson. When I found out he was MR. SALAD DRESSING, I simply went ga-ga! They were both very down-to-earth and he seemed so pleased that I regularly used his salad dressing!
Beet Salad
2 C. sliced cooked beets
1/4 C. sliced onions
1/2 C. Hendrickson's
Layer beets and onions in bowl. Add Hendrickson's and let stand for one hour before serving. Makes 2 cups.
Deviled Eggs
6 hard boiled eggs
1/2 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. pepper
3 Tablespoon. mayo
1 tsp. Hendrickson's
Mash yolks; add salt, mustard, pepper, and Hendrickson's. Fill egg whites. Use within 24 hours. Makes six servings.
Hendrickson’s Coleslaw
4 C. shredded green cabbage
1/4 C. chopped green pepper
1/4 C. chopped green onion
1/2 C. shredded carrot
1/2 C. Hendrickson's
Mix first four ingredients together. Pour in Hendrickson's; mix and serve. Makes 5 cups.
