2 cups pecans. Use a food processor to finely chop..
add 16 oz cream cheese at room temperature
1 8 oz can crushed pineapple, drained..
1/2 tsp salt
process just to combine, about 10 seconds. Scrape down sides of bowl..
add 1/4 cup chopped green pepper
2 Tab minced onions..
pulse just enough to combine, about 10 seconds...
Place mixture on a large piece of plastic wrap..
form roughly into the shape of a log..
wrap and chill until stiff enough to mold, at least 1 hour..
or freeze up to a month...thaw overnight in the refrigerator..
remove plastic wrap and form into a candy cane shape. Use slices of pimento for the stripes..
let return almost to room temperature before serving with crackers...serves 30..
