Recipe Introduction
Here is one of my favorite St. Louis recipes.
Marinate tenderloin all night in the following:
1/2 c. soy sauce
1 tsp. sugar
1 clove garlic, crushed
1/2 t. ground ginger
1 tsp. monosodium glutamate.
Mix together all ingredients and pour over tenderloin. Refrigerate.
Next morning, sprinkle Adolph's tenderizer all over the meat and wrap tenderloin in several bacon strips. Refrigerate until ready to cook. Preheat oven to 450 degrees. Broil 20 minutes, using melted butter to baste during cooking. Turn meat over and continue to broil and baste with butter. Broil until you get the stage you want. rare, medium, well done. To test, slice meat and check color.. To serve, slice into 1 inch slices; place back together and serve with mushroom gravy.
Mushroom Gravy :
1 large can mushrooms stems and pieces & liquid
Drippings from meat
Water- 3/4 to 1 cup
Worcestershire sauce-2-3 dashes
Garlic Salt-1-2 dashes
Tabasco- a few drops
Mix in pan and heat thoroughly. Taste and adjust seasoning. If too much water, cook more.
