Tear 1 lb. hard crusted bread into bite sized pieces ..in a large bowl drizzle the bread generously with olive oil[ up to 1 1/2 cups] and toss. Then add cut up tomatoes. Bread will absorb the oil and tomato juice
add 1 large cucumber, cut up
1 medium onion, chopped
4 oz chopped Basil
3/4 cup red wine vinegar and
salt and pepper to taste, total of 2 teaspoons..
let marinate a short while before serving..
no amount of tomatoes was specified. I think 4 to 6 cups would be about right..
