at one time there were several around St. Louis area, the original was in Downtown St. Louis, serving office workers and shoppers for many years with daily specials, good food, fair prices and smiling staff...as the suburban shopping centers developed, Popes added some locations. When I taught music lessons at Northland Shopping Center in the early 60's I would eat at Popes...this was my favorite dessert
1/2cup white sugar
1/2 cup brown sugar
sift together and slowly add to ....
3 egg whites, beaten to soft peaks and gradually add the sugar until thick and glossy..
add 1 tsp. vanilla...
combine 3/4 cup graham cracker crumbs with 3 Tab finely chopped pecans. Sprinkle a little at a time over egg whites and gently fold in... spread batter in a heavily buttered 8 inch cake pan with 2" sides. Bake at 350 degrees for 30 minutes. It will be light in color when done.. cool in pan.. remove to serving plate and cover top with sliced banana. Whip 1 cup whipping cream and frost top and sides. Garnish with sliced bananas, maraschino cherries and either chopped pecans or slivered almonds. Keep chilled..
