    Monroe County Illinois

    2 lbs pork shoulder, cut into 1" cubes..
    coat with flour and brown in 3 Tab. oil in heavy pot..
    add 3 Tab. flour and stir smooth..

    add 1 cup boiling water
    1 pkg. dry onion soup mix
    1 tsp. dill weed
    1 tsp. caraway seed
    1 tsp. salt
    1 clove garlic, chopped
    mix well. Reduce heat and simmer , covered, 1 hour

    add 2 cans [14 oz each] of sauerkraut, drained
    1 Tab. Paprika

    simmer 30 additional minutes..
    stir in 2 cups sour cream and heat gently..

    Of course this was traditionally served over buttered noodles or beside Potato Dumplings..
    with buttered ,browned bread crumbs sprinkled on top..
