    List of Ingredients




    1 lb seafood
    [your choice-shrimp, crab, crawfish, or fish]
    1/4 cup oil
    1 1/2 cups hot water
    1/4 cup flour
    8oz tomato sauce
    16 oz diced canned tomatoes
    1/2 cup chopped onions
    1/2 cup chopped parsley
    1/4 cup diced green pepper
    4 cloves garlic, finely chopped
    1/4 cup butter

    1 tsp cayenne pepper
    1/2 tsp lemon juice
    1/2 tsp thyme
    1 tsp Cajun spice

    prepare a roux by heating oil in a large heavy skillet over medium heat, gradually blending in flour with a whisk...
    stir constantly until brown and smooth in texture..
    be careful not to scorch!

    gradually add water and stir until thick and creamy..
    sauté onions, green pepper, garlic, in butter until soft..
    then add to roux and stir..
    add rest of ingredients..
    simmer 15 minutes..
    serve over hot, white rice...serves 6
