3/4 cup chopped onion.. sauté in 1/3 cup olive oil on medium heat for 10 minutes , stir, until transparent....
Drain 3 [10 oz] cans minced clams and save juice. Add half the juice to the onions, cover and cook on low about 15 to 20 minutes.. Add:
the remaining juice
the clams
1 tsp pepper
2 cloves minced fresh garlic
1/2 cup fresh minced parsley
Cook on medium for 5 minutes. Serve over 1 1/2 lbs. cooked linguine and arrange on top
12 steamed cherrystone clams...
serves 6 as entree
