Veggie Goulash

in a large skillet on medium heat, warm 1 Tab vegetable oil
saute 1 medium, chopped onion until soft
add
16 oz can crushed tomatoes
1 medium zucchini, cubed
OR
12 oz frozen broccoli [thawed]
1 tsp oregano
1 tsp salt
handful of dried parsley or cilantro
stir to mix, simmer 5 minutes..
add 16 oz pkg. firm tofu, drain and crumble
2 cups cooked macaroni
2 tsp soy sauce
I use lite variety
1/4 tsp pepper
stir and heat thoroughly..
makes four servings..
