The perfect addition to the Thanksgiving feast is Buttermilk Corn Bread Loaf, which tinkers with tradition deliciously. Quick and easy to make, this tasty bread is baked in a medium loaf pan.
List of Ingredients
1 1/ 2 cups flour
1 cup yellow cornmeal
6 tbsp. sugar
2 tsp. baking powder
3/ 4 tsp. salt
1/ 2 tsp. baking soda
1/ 2 cup shortening
1 1/3 cups buttermilk
2 eggs
Recipe
Preheat oven to 375 degrees. Grease a medium (8-inch x 4-inch) loaf pan. In a medium bowl, combine flour, cornmeal, sugar, baking powder, salt and baking soda. Cut in shortening with a pastry blender or two knives until mixture resembles coarse crumbs. In a small bowl, whisk together buttermilk and eggs. Make a well in the center of the dry ingredients. Add buttermilk mixture; stir until mixture forms a stiff batter. (Batter will be lumpy.)
Turn into prepared pan; spread mixture evenly, removing any air bubbles. Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes before removing to a wire rack. Makes one loaf.
