Gooey Brownie Sundaes

1 (19.8-ounce) package family-style brownie mix, plus ingredients to prepare mix
1/2 cup chopped peanuts (optional)
1/2 cup creamy peanut butter
1/4 cup sugar
1 egg
2 pints vanilla ice cream
Easy Hot Fudge Sauce (below)
Freshly whipped cream
Candy sprinkles and/or cherries

Preheat oven to 350 degrees. Line a 15-inch by 10-inch baking sheet with aluminum foil; grease the foil. Prepare brownie mix according to package directions; add peanuts to batter. Spread into prepared pan. In a medium bowl, combine peanut butter, sugar and egg. Spoon peanut butter mixture in dollops over batter; swirl with the tip of a knife. Bake 15 to 18 minutes or until peanut butter mixture has lightly browned. (Do not over-bake.) Cool completely. Remove from pan. With a 3-inch round cookie cutter, cut 12 circles. To serve, place a scoop of ice cream on a brownie; top with a second brownie. Drizzle with Easy Hot Fudge Sauce. Top with freshly whipped cream, candy sprinkles and/or cherries, if desired. Repeat. Makes six servings.
Easy Hot Fudge Sauce
(This sauce can be prepared up to one week ahead. Cool. Cover and refrigerate. Micro wave on high 11/2-2 minutes, stirring after 1 minute, until warm and smooth.)
8 ounces unsweetened chocolate squares, coar sely chopped
11/3 cups heavy cream
11/3 cups sugar
1/4 cup butter, cut up
2 tsp. vanilla
In a medium microwave-proof bowl, combine chocolate and cream.
Microwave on high 11/2 minutes. Stir until chocolate is completely melted. Stir in sugar. Microwave 1 minute longer. Stir to dissolve sugar. Stir in butter and vanilla until smooth. Serve warm. Makes 3 cups.
