    Green Bean Salad with Feta

    (Can be prepared up to four hours in advance.)
    2 pounds green beans, trimmed
    1 small red onion, thinly sliced
    1/2 cup crumbled feta cheese
    3 tbsp. white wine vinegar
    1 clove garlic, minced
    1/2 tsp. salt
    1/4 tsp. pepper
    1/2 cup olive oil
    1 cup chopped walnuts, toasted

    Bring a large pot of salted water to a boil; add green beans. Cook, uncovered, until just crisp-tender, about eight minutes. Drain. Rinse with cold water. In a large bowl, combine green beans, onion and feta cheese. In a medium bowl, combine vinegar, garlic, salt and pepper; whisk in olive oil until well blended. Pour over bean mixture; toss to coat. Cover and chill at least one hour or up to four hours. Add walnuts just before serving; toss to coat. Serves eight.
