add some dry red wine, black pepper, mace (or nutmeg) and garlic powder and your sausage will be magnifico!!!
List of Ingredients
add : Medium Hot Sausage
: 1 Pork Butt (4 to 5 pounds) coarsely ground
: 2 teaspoons paprika or sweet red pepper
: 1 teaspoon crushed hot pepper
: 1 1/2 teaspoons salt
: 4 teaspoons fennel seeds
Recipe
Mix all ingredients together. Either make links or patties.
Tips: ====
1) There are times where I want to have the pork butt ground a little finer. I usually put it through the grinder twice to get the perfect consistency.
2) I use paprika - it's more flavorful.
3) Instead of the crushed hot pepper - I prefer finely ground cayenne pepper - its spreads the "heat" more uniformly and I like the taste.
4) Do not remove all of the fat from the pork butt. You need a little to add some flavor when cooking.
