    Italian Almond Cookies

    8 oz almond paste
    2 egg whites
    1 cup sugar
    1/4 cup sifted flour
    1/4 cup confectioners sugar

    Recipe



    Turn almond paste into a bowl. Gradually add 1 cup sugar and 2 egg whites and work well into almond paste with fingers. Then knead in 1/4 cup sifted flour, and 1/4 cup confectioners sugar. Knead.
    Drop by teaspoons on lightly greased cookie sheet 2 inches apart. Put a pignole nut on top of each cookie before baking. Bake at 300* for 20-25 minutes. Remove from cookie sheet immediately. Makes 4 dozen.
