Light Pasta Dish

Recipe Introduction
With spring time comes a longing for lighter, easier to prepare dishes for dinner or a large lunch. Here is a really great dish and a twist on your traditional antipasto ingredients.
You will need:

(Makes 4 servings)
1 lb. penne or bowtie pasta
1 jar of roasted red peppers
1 medium size vidalia onion
3 cloves of garlic
mozzarella cheese
1 jar of marinated mushrooms
1 jar of marinated artichoke hearts
olive oil
Recipe
Sautee diced onion and garlic in 2 tablespoons of olive oil. When they are lightly cooked or transparent add chopped mushrooms, artichoke hearts and roasted red peppers. Let the mixture cook on low just enough to heat them up (5-10 minutes). Cook pasta and then add the mixture to the cooked pasta. Give it a good toss and add shavings of mozzarella cheese (can us low fat to keep healthy).
