Mandarin Chicken Salad

(Sesame oil adds a wonderful, nutty flavor to this Asian-inspired salad. If you don't have any on hand, you can use vegetable oil instead.)
2 tbsp. butter
1 (3-ounce) package Oriental-flavor ramen noodle soup mix
2 tbsp. sesame seeds
1/4 cup sugar
1/4 cup white vinegar
1 tbsp. sesame oil
1/2 tsp. pepper
2 cups cut-up cooked chicken
1/4 cup (lightly salted) cocktail peanuts
3 medium green onions, sliced
1 (16-ounce) bag coleslaw mix
1 (11-ounce) can mandarin orange segments, drained
Recipe
Melt butter in a medium (10-inch) skillet over medium heat. Stir in seasoning packet from soup mix. Break block of noodles into bite-size pieces over skillet; stir into butter mixture. Cook noodles two minutes, stirring occasionally. Stir in sesame seeds. Cook about two minutes longer, stirring occasionally, until noodles are golden brown. Remove from heat. In a large bowl, combine sugar, vinegar, oil and pepper. Add noodle mixture and remaining ingredients; toss to coat. Makes six servings.
