    Mini Banana Chocolate Chip Bread

    1 1/4 cups sugar
    1/2 cup butter, softened
    2 eggs
    1 1/2 cups mashed ripe bananas
    1/2 cup buttermilk
    1 tsp. va nilla
    2 1/2 cups flour
    1 tsp. baking soda
    3/4 tsp. salt
    1 cup miniature semisweet chocolate morsels

    Preheat oven to 350 degrees. Grease four miniature (5-inch by 3-inch) loaf pans. In a large bowl, mix sugar and butter. Stir in eggs until well blended. Add bananas, buttermilk and vanilla; mix well. Add flour, baking soda and salt; stir until just moistened. Stir in chocolate morsels. Divide batter among prepared pans. Bake 35 to 40 minutes or until a toothpick inserted in centers comes out clean. Cool in pans 10 minutes before removing to wire rack. Cool completely. Wrap tightly and store at room temperature up to three days, or store tightly wrapped in refrigerator up to one week. Makes four miniature loaves.
