List of Ingredients
Olive Oil
2 cloves Garlic (you can add more if you wish) - I use it sliced for this recipe but you can chop it. I like the flavor.
1 can Romane Italian mushrooms cut into bite size (regular mushrooms can be used - either canned or fresh).
1 can Cannolini Beans (use some of the juice for flavor)
1 Package Fresh or frozen Spinach
20 Grape Tomatoes or 15 Cherry Tomatoes (again, add more or less if you like - also, I prefer cutting tomatoes in half)
Fresh Basil - broken up
1 Pound Penne Pasta (Cut Ziti if you can't find Penne)
Grated Parmesan cheese
Cheese shavings (optional)
Recipe
Directions:
1) Put the water on to boil for pasta and salt.
2) Just before putting the pasta in the water, start the sauce.
3) Saute the garlic in the oil.
4) Add spinach
5) Put pasta in water
6) When spinach is wilted, add mushrooms, beans (and bean juice) and tomatoes.
7) When pasta is cooked to al dente stage (a little less if possible), scoop out and put in pan with sauce. Add some water from the pasta to keep nice and wet (almost a little soupy). Add grated cheese to taste. When pasta is cooked to desired state, remove and plate.
9) Add parmesan shavings on top.
Serve with crusty, hot Italian bread (the type you break chunks off and not slice!!!
If you really want to make it fantastic, add some dried hot pepper flakes to pan just before serving.
