    2 cups flour
    3 tbsp. sugar
    1 tbsp. baking powder
    1/2 tsp. salt
    1/4 tsp. baking soda
    3 eggs, separated
    2 1/4 cups buttermilk
    1/4 cup butter, melted
    Pure maple syrup
    Confectioners' sugar (optional)
    Fresh fruit (optional)
    Freshly whipped cream (optional)

    Heat a waffle iron. In a large bowl, combine flour, sugar, baking powder, salt and baking soda. In a medium bowl, whisk egg yolks until lightly beaten. Whisk in buttermilk and melted butter until blended. Whisk buttermilk mixture into dry ingredients until smooth. In a separate, medium, bowl, beat egg whites until stiff. Fold egg whites into flour mixture just until blended. Bake waffles in a waffle iron according to manufacturer's directions, until crisp and golden brown, 2 to 5 minutes. Repeat. Dust waffles with confectioners' sugar; serve with maple syrup, fruit and whipped cream, if desired. Serves four to six.
