    Pina Colada Punch

    (Canned cream of coconut is available in large supermarkets.)
    5 cups chilled pineapple juice, divided
    1 (15-ounce) can cream of coconut
    1 liter chilled lemon-lime soda
    Two limes
    11/2 cups light rum
    Ice cubes
    1/2 pint coconut sorbet (optional)
    Fresh mint

    Recipe



    In a blender container, combine 2 cups pineapple juice with cream of coconut. Blend until well mixed. In a medium punch bowl, combine blended mixture with remaining 3 cups pineapple juice, soda, juice of one lime, rum and ice. Add scoops of coconut sorbet; stir gently. Garnish with one sliced lime and fresh mint. Serves 15.
    Colada Cooler
    (For festive ice cubes, freeze grapes in white grape juice or water in ice trays.)
    1 (11- to 12-ounce) can frozen white grape juice concentrate, thawed
    1 (10-ounce) can frozen pina colada mix concentrate, thawed
    8 cups cold water
    1 (12-ounce) can chilled lemon-lime soda
    Ice cubes
    Lemon and lime slices
    In a large pitcher, combine white grape juice concentrate and pina colada mix concentrate. Stir in water. Chill in the refrigerator until ready to serve. Just before serving, stir lemon-lime soda into mixture in pitcher; add ice cubes. Add lemon and lime slices. Serves 15.
