No matter what I tried I could not get my crust like that until I purchased a LaCloche from William Sonoma catalog and used their rustic bread recipe. It was well worth the $50.They make a round or a long for French bread. I make the one large loaf in the long LaCloche from this recipe. It won't work without the LaCloche. Here is the recipe:
In a mixer combine:
5 c. white flour
2 tsp. ground sea salt
2 c. warm water
3 tsp. active dry yeast that has been dissolved in 1/4 c. warm water.
Knead on med. speed for 10 min. cover and let rise 1 hr. then punch down -
Flour LaCloche generously put in dough, make 3 cuts across top of the loaf and flour - cover and let rise 1 hr. Bake exactly 55 minutes in a preheated 425 degree oven. Remove top of LaCloche as soon as it is removed from the oven.
My grandmother made her own pizza dough here's the recipe:
4 c. flour
1 tsp. salt
1 pkg. Yeast dissolved in 1/4 c. warm water
1 1/2 c. warm water
Mix all ingredients and knead until smooth. Cover and let rise 1 hr.
Put in an oiled rectangle pan let rest 1/2 hour and put sauce on top - bake 350 degrees for approx. 1/2 to 3/4 hr.
Sauce:
In a saucepan:
2 tbsp. olive oil lightly brown garlic (2 or 3 cloves) that has been finely chopped - do not remove then add 1 lg. can whole tomatoes that you crush by hand, 2 or 3 fresh basil leaves, and pinch of salt, cook down approx. 1/2 hr. Slightly cool and put on dough add grated cheese.
