1 recipe pizza dough, spread out in an oiled jelly roll pan and allowed to rise slightly.
Top with the following sauce (made ahead and cooled):
In a saucepan heat 4 tablespoons olive oil. Add 2 crushed cloves of garlic and saute briefly, taking care not to let garlic brown. Add a 28 oz. can of crushed tomatoes and drop in a small, whole onion. Add 1 tsp. dried basil, 2 tablespoons sugar (this is the critical ingredient!) and salt and pepper to taste. Simmer 45 minutes stirring occasionally. Toss onion out and cool sauce before using.
Top pizza crust with sauce and sprinkle approx. 1/2 cup of pecorino romano cheese (no substitutions). Bake at 450 degrees for about 20 minutes. Watch carefully so it doesn't burn
